You can use an iframe as with normal html.

Or for an example of how jamroom does that take a look at smarty_function_jrYouTube_embed in jrYouTube/include.php

You'll need to take into account the information that is passed in to the smarty function in order to parse the youtube_embed_iframe.tpl template.
