On our servers, customers can login to cpanel, click "optomize website" then choose the compression style (all or specific mime types). Can it be done better within the software than by the server itself?

Not sure, I asked Brian about 1-2 weeks ago he said don't do anything that you guys will be adding this to one of your updated versions?

Is that correct?

gzip is already turned on JR5 - just make sure this line is in your .htaccess file:

Code

# Compress everything we can
<IfModule mod_filter.c>
AddOutputFilterByType DEFLATE text/html text/plain text/xml text/css text/javascript text/javascript-x application/javascript
</IfModule>

It is part of the default .htaccess that comes with the core. If it is not working for you, then you need to contact your hosting provider and make sure you have access to mod_filter. It's working here for me (~374k JS compressed to ~90k).

Hope this helps!

I'm pretty sure you need mod_deflate.

Yes - mod_deflate provides the DEFLATE support in mod_filter.
