Actually, I think that if you clone the module correctly, and catch and change all instances of 'jrLike' and 'like' in the code, templates and language strings, it should just show in the menu dropdown.
One thing to consider when cloning though is that there is a dislike option in the Like module. You may want to take out the code for that in the new module, unless, of course, you want a 'not a favourite' option ;-)
Alternatively, less to code in and just don't enable the dislike option in the new module.

I've re-read those old posts and I'm thinking what I thought then - Favourites and Likes are pretty well the same thing and Likes are listable, so if necessary, a bit of template work could make the lists more detailed if need be.
Or maybe I'm misunderstanding what you are asking for?

Groups: how to receive notification of new member applying for a private group

An alternative would be a simple custom module to 'listen' for this 'new applicant' notification and then search for any linked users and copy it to them as well.
I'm worried that this is an exception to the way Jamroom normally works so specifically adding it to a core module like Group could open up a can of worms!!

It may be easiest to just update the Group module so as to send notifications to all linked users, but want to think about it for a bit to make sure there are no implications with this.

We were thinking about using the Guestbook, but if I understand that module correctly, it doesn't allow for someone to respond to something posted in their guestbook, does it?

Not by default it doesn't. But you could add comments to each guestbook entry with a bit of template work. What I'd do is create an 'item_detail.tpl' template for the guestbook module to show individual entries and include the Comment Form in that. the 'item_list.tpl' template would then be modified so that each entry links to its own detail page.

ACP=>Communication=>Private Notes=>Quota Config tab
Select the 'Hosting Team' quota and uncheck the Followers Only checkbox.
