I believe you can change it in your ACP > Skins > YOURSKIN > Language section. Switch the language drop down to the language you want to use and click the Save Settings button at the bottom of the page.
Cant Upload Images To Gallery
Using Jamroom
You can turn the Gallery part off by unchecking the Group by Gallery check box in your ACP > Image Galleries > Quota Config tab.
Search page

You would have to create the search page and then change the search link in your header_menu_mobile.tpl file to point to the new page.

You'll either want to create a language file for your skin:

Or you could go to your ACP > Skin Settings > Language tab and translate from there if you wish.
How Do I Delete Images In Slate/Site Builder?
Using Jamroom
The Elastic skin is setup for the new Site Builder as well as the Lucid skin.
The only item you can upload through the Site Builder module would be images, everything else, videos etc... needs to be uploaded via your profile as usual, then you can embed them via the Site Builder.
