You need to actually DISABLE the site builder module - not just hide the button. Click on the "info" tab for Site Builder in your ACP and disable the module.

Installation and Configuration

You can watermark images in Core -> Image Core -> Quota Config tab.

You will see the "Galleries" menu item in your profile menu once it has been enabled in your quotas.
