I do like to have gender as one of the signup questions on my site- it helps me when moderating, or in protecting vulnerable members, and sometimes helps me detect spammers (who so often identify themselves as female and from a large city when applying for membership).
Lately I've had a few folks join who may not feel as welcome if presented with only male/female options when joining my site, so I added a third option of "non-binary".

To do this, go to your site's signup page: yoursite.com/user/signup
Then click the Form Designer button.
If you already have Gender as one of your signup questions, add the non-binary to the bottom here:
m|Male
f|Female
n|Non-binary

You could add other different choices for your members as well, as well as "I prefer not to say".

I have the field type set to Radio button. (like a round checkbox)
In the "sub-label" textbox near the top, I also added the following:
(will not be publicly visible on your profile)
That sub-label is important as it reassures new members that their gender will not be visible to the other members or the browsing public.
